The brewery specializes in mixed-fermentation farmhouse ales, using a blend of brewers yeast, naturally occurring wild yeast, and native souring bacteria to develop complex acidity and funk. Snörkel's grain bill features pilsner malt and wheat, brewed with Texas well water and a delicate blend of noble hops. After fermentation, 60 pounds of fresh oyster mushrooms and alderwood-smoked sea salt are added, introducing deep umami and salinity. Those mushrooms come from Logro Farms, located just a few hundred yards from the brewery, where spent grain from Jester King's brewing process is repurposed to grow the oyster mushrooms — completing a fully closed-loop agricultural cycle.
